Water

The number one priority in food hygiene is the purity of water, not only the water you drink, but that used to wash food and brush your teeth. It is quite a shock to many that the majority of the world's population does not have access to water that is free of harmful micro organisms, viruses, as well as natural and industrial contaminants. It is best to always assume the water is not safe. Don't drink a glass of water served at the table, always ask for water in a sealed bottle. Find secure bottled water (water bottled locally may be contaminated) or drink beer, wine or other "manufactured" beverages which are more certain to be free of contamination. Ice, reconstituted fruit juice or other drinks may be made from unsafe water.

A small water purifier with 0.3 micron and iodine resin filters, if properly used and maintained, will eliminate all micro-organisms and viruses in contaminated water. Alternately, three drops of iodine can be added to a litre of water. Let stand 30 minutes. Adding vitamin C to the water after treatment can eliminate chemical taste. This will kill micro-organisms but may not destroy viruses.

Remember that food washed in contaminated water is also contaminated. For this reason it may be best to avoid fresh salads and fruit. Wash your hands frequently (best with antibacterial soap). Chlorinated beach, which is the usually readily available, can be used to disinfect eating utensils and many other objects.
